This recipe for Belizean garnaches is so very delicious and simple! 

It will make about 12 garnaches or enough for 4 people.

Ingredients

1 pack of round fried corn tortillas

1 can refried kidney beans or black beans

1 medium tomato, finely diced

2 cups green cabbage, finely chopped or pickled onions

2 tbsp tomato, finely chopped

½ cup Edam or Gouda Cheese, grated

¼ cup purple onion, finely chopped

3 tbsp vegetable or olive oil

Pepper sauce (optional)

Instructions

  1. Add oil to a heated frying pan or large skillet on medium heat. Add beans and purple onions. Salt and black pepper can be added to taste. Remove beans from heat, turn off the stove and allow beans to cool.
  2. Mix cabbage and tomato in a bowl and add cilantro, salt, and black pepper to taste. The cabbage and tomato can be replaced with pickled onions.
  3. After the beans have cooled, paste a thin layer on each corn tortilla.
  4. Then add some of the chopped cabbage and tomato mix or pickled onion to each corn tortilla.
  5. Finally, sprinkle grated cheese on top and add your favorite hot sauce.
